Homemade Chocolate Chip Muffins


 
My family LOVES chocolate chip muffins and I have bought countless boxes of Betty Crocker muffin mixes.  However, those boxes are a little on the pricey side (around $3) and the last two boxes I bought had WEAVELS.....GROSS!!!  So I decided to try some of homemade muffins.  I found this recipe www.joyofbaking.com.  Give them a try...they are SUPER yummy!!!!

Chocolate Chip Muffins

1/2 cup of butter, melted and cooled
2 large eggs
2/3 cup milk
2 cups of all-purpose flour
2/3 cups white sugar
2 1/2 teaspoon salt
2 tsp vanilla
2 Tbsp applesauce
1 cup mini chocolate chips


1. Preheat oven to 375 degrees and place oven rack.  Grease 12 muffin cups or use liners.
2. In a bowl, whisk together eggs, milk, applesauce, and vanilla extract.
3. In another bowl, whisk together the flour, sugar, baking powder, and salt.  Stir in chocolate chips.  Fold in melted butter and wet ingredients.  Stir only until dry ingredients are moistened.  You don't want tough muffins!!!!
4. Evenly fill muffin cups with batter.  Bake for 18-22 minutes, or until golden brown.  Enjoy!!!
